Knoephla

When it’s the middle of winter, the temperature has been below zero for over a month, and you don’t want to go outside but you still have to shovel your driveway, Knoephla is the soup you want waiting for you inside. Knoephla is popular in parts of North Dakota, South Dakota, and Northern Minnesota that have a lot of German/Russian heritage. The name of the soup “knoephla” translates to little button because the dumplings are rolled out and cut to the size of small “little buttons.” I don’t know why this soup isn’t really a thing outside of the upper midwest, but my goal is to spread the word. Especially to any place where winter lasts three months longer than you would like.
